Wow, I've posted about 5 things in the last few days - this place is great!

I bought some red seaweed from a coral shop and when I bought it is was fairly stiff and dark red, it has been in my tank for two week and has started to droop and go white  I think it breaks off when it turns white... My ammo, noČ and no3 readings are fine.

Whats wrong with it... I have 2 powerheads going and have placed it in soft flow areas and strong flow areas - it seems to be fading pretty quick :|

Some plants don't do well in captivity. It's hard to say without know what type. Also in my experience a lot of plants just don't transition from one environment to another well.

Sometime increasing Iron additives helps with certain plants. But it can also increase your algal growth.

Can you post a photo of the plant - That may help some.

could be a lighting difference from the LFS and your Aquarium.

Most Red Seaweeds need really intense light to survive. Nutrient levels are almost never a problem, as most of us are seeking to lower them anyways.

I have had the best luck under Metal Halides, but have seen growth and health under VHO's and PC's, providing enough intesity was available.

Maybe move it closer to the surface and see how it reacts in a week or two...
